~ Waldorf Astoria Stew~

 

     
 In a crock pot, or a dutch oven, layer ingredients in this order:
  2 - 3 lbs. lean stew meat in small chunks (do not brown)
  1 large white onion, peeled and diced or chunked
  4 potatoes, peeled and cut in bite size chunks
  5 big carrots, cut in thick wheels
  4 ribs of celery, cut up

In a bowl stir:
  1 can tomato soup, 1 soup can water
  3 Tbsp. instant tapioca (for thickening)
  1 Tbsp. worcestershire
  2 Tbsp. sugar
  2 tsp. salt
  pepper to taste

Pour sauce over the stew.  Pop on the lid and forget it.
Do not peek; do not stir. It makes its own gravy.
Crock pot all afternoon on “high” or all day on “low.”
In the oven, put dutch oven in at 250° F for 4 to 5 hours.

Optional:  Just before serving, you can stir in a cup of frozen green peas for color.
