Finnish “Oven” Pancakes


     3 eggs
     2 cups milk
     2 cups flour
     1 tsp. salt
     2 Tbsp. sugar


Beat eggs, salt, sugar.  Add milk, flour until air bubbles form by beating.
Grease a 9 or 10-inch cast iron skillet and fill with the batter. 

Bake at 325°-350° for 20 minutes.  The mixture will rise, then fall. 

Cut into wedges.  Serve with butter and jam.
