~Sun-Dried Tomato Pasta Salad~

        
   
Prepare 1 box of Ronzoni Rigotoni (or other type of tubular pasta)

While that is going…
In a large bowl combine:
½ cup Seasoned Rice Vinegar
1/3  cup Olive Oil
½ tsp salt
½ tsp fresh ground black pepper
2 cloves fresh Garlic, crushed
1 ½ tsp dried Oregano
3 fresh cut tomatoes

     
Then add 12 sundried tomato halves minced (about ¼ cup)  
4 tablespoons fresh chopped basil leaves                      

Then add the cooked pasta and 1 cup of shredded Parmesan cheese.


Toss & Eat!

This is the pasta salad Suzette brought to the “homestead” Christmas Eve party in 2001.  Yum!
